Selling Maple Syrup and Honey from Home in Maine: License Requirements

Maine is the third-largest maple syrup producer in the country, and backyard beekeeping has exploded in the last decade. If you're tapping your own trees or keeping hives and want to sell the output, the licensing picture is more forgiving than most home food products — but there are lines you can't cross without upgrading.

Maple Syrup: The Straightforward Sale

Pure maple syrup is a non-TCS (non-Time/Temperature Control for Safety) product. It's shelf-stable, naturally resistant to bacterial growth due to its high sugar concentration, and has a long history of small-scale home production in Maine.

Direct farm sales: If you're selling syrup you tapped and boiled yourself directly to consumers at your property or another qualifying site of production, a local Food Sovereignty route may apply if your town has an active ordinance and the sale is face-to-face. A farmers' market is an off-site channel and requires the DACF Home Food Processor License and applicable DACF Mobile Vendor License.

Selling off-site or to retail: If you want to sell to grocery stores, restaurants, or ship within Maine, you'll need a DACF Home Food Processor License ($20/year). The license covers the syrup as a shelf-stable product. The licensed home-processing kitchen gets inspected, and if that site uses a private well, you'll need water testing.

Grading requirements: If you label your syrup with a grade (Golden Delicate, Amber Rich, Dark Robust, or Very Dark Strong), you're subject to Maine's maple syrup grading standards. Accurate grading matters — mislabeled grade is a compliance issue.

The product where things get more complex is maple-derived products: maple candy, maple cream, or maple sugar. These are processed foods, not raw agricultural products, and they follow the same licensing path as other non-TCS goods.

Honey: The Beekeeping Exemption and Its Limits

Raw honey is a shelf-stable product, but its licensing path depends on the sales channel. Direct, face-to-face sales at the site of production may qualify for a local Food Sovereignty route; off-site sales, including farmers' markets, require the DACF Home Food Processor License and applicable Mobile Vendor License.

But "unprocessed" is the key word. The moment you:

• Infuse honey with flavors (lavender honey, hot honey, cinnamon honey)
• Blend honey with other ingredients
• Create honey-based products (honey butter, honeycomb candy)
• Heat-treat or pasteurize beyond basic straining

...you've crossed into processed food territory and need a Home Food Processor License.

Labeling for Both Products

Whether or not you need a processing license, you still need compliant labels for any product sold off your property:

• Product name (including grade for syrup)
• Net weight or volume
• Your name and address as the producer
• Ingredient list (for blended or flavored products)
• Allergen declarations if applicable

For pure, single-ingredient products (100% maple syrup, 100% raw honey), the ingredient list is straightforward. But the label still needs to be on the container before it leaves your hands.

When to Get Licensed

If you're selling more than one or two products from your home operation — syrup plus baked goods, honey plus candles and lip balm — you're likely building a home food business that benefits from the full DACF licensing process. The $20 annual fee covers all your non-TCS products under one license.
